Barbecue Wings and Mustardy Potato Salad

Ingredients

  • Potatoes

  • Bacon

  • Scallions

  • Mayo

  • Apple Cider Vinegar

  • Whole grain mustard

  • Wings

  • Barbecue Sauce

Prep the Potato Salad

  1. Bring a pot of salted water to boil. Cut the potatoes into bite size pieces and add to the water. Cook until tender

  2. Cook the bacon until golden, and dry on a paper towel lined plate.

  3. Make the dressing. Add mayo, apple cider vinegar, mustard, salt, pepper and sugar to a bowl, and whisk to combine.

  4. Add the cooked potatoes to the dressing while they are still warm. Stir in the scallions and set aside.

Cook the Chicken

  1. Preheat the grill.

  2. Add water and barbecue sauce to a bowl and stir to combine.

  3. Add the wings to the grill and brush over the barbecue sauce.

  4. After a few minutes, flip the wings and brush sauce over the other side. Repeat every few minutes - flipping and brushing. Each layer of sauce will caramelize and glaze the wings.
